Had a few tomatoes that were sitting on the window sill that were looking rather tired. They needed to be used or thrown out. I decided that roasting them up would be a good way to not waste them.
Made a slurry of olive oil, minced garlic and some herbs and spices including oregano and herbs de Provence and threw it on top of the halved tomatoes. Roasted them, let them cool, peeled them and then gave them a coarse chop.
